Stuffed Bhindi also known as Bharwan Bhindi in hindi is dry, stuffed with spicy masalas in middle.

Ingredients
  • 250 gms Lady Finger (bhindi)
For Filling
  • 1 tsp Salt (namak)
  • 2 tbsp Coriander Powder (dhania powder)
  • 1 tsp Turmeric Powder (haldi)
  • 1 tsp Mango Powder (amchur)
  • 1/2 tsp Red Chilli Powder (lal mirch)
  • 1/2 tsp Garam Masala
  • 1/2 tsp Oil
For Tempering
  • 1 tbsp Oil
  • 1 Pinch Asafoetida (hing)
  • 1/4 tsp Mustard Seeds (rai)
  • 1/4 tsp Cumin Seeds (jeera)
  • 1/4 tsp Kalonji
  • 1/4 tsp Fennel Seeds (sauf)
Instructions
  1. Take 250 gms Bhindi. Wash, Drain and dry it with a kitchen towel and keep it aside.

  2. Remove head and tail of all the Bhindis with a knife. Make a slit on Bhindi with knife without breaking it into two parts.

  3. Take 1 tsp salt, 2 tbsp coriander powder, 1 tsp turmeric powder, 1 tsp mango powder, 1/2 tsp red chilli powder , 1/2 tsp garam masala and 1/2 tsp oil and mix it well. 

  4. Stuff the masala in the bhindi one by one with hands. 
  5. Take 1 tbsp oil in a kadhai and put it on low to medium gas flame. Let it warm.

  6. Add a pinch of asafoetida, 1/4 tsp fennel seeds, 1/4 tsp mustard seeds, 1/4 tsp cumin seeds and 1/4 tsp kalonji in warm oil. Let it crackle.

  7. Add Stuffed bhindi and mix it well. Stir it occasionally and keep the flame low.

  8. Cover it with a lid. Let it cook for 10 minutes. Stir it. Cover it again. Let it cook for some time. After 5 minutes check if it is cooked or not.

  9. Empty it and serve it hot with Roti, Paratha etc.

Stepwise Procedure to make Stuffed Bhindi

  1. Take 250 gms Bhindis. Wash it properly under running tap water and drain it off. Dry all Bhindis with a clean kitchen towel and keep it aside.

  2. Remove head and tail of all the Bhindis with a knife. Make a slit on a Bhindi with a knife so that it does not break.

  3. Take 1 tsp salt, 2 tbsp coriander powder, 1 tsp turmeric powder, 1 tsp mango powder, 1/2 tsp red chilli powder , 1/2 tsp garam masala and 1/2 tsp oil and mix it well.

  4. Stuff the masala in the bhindi one by one with hands.

  7. Add Stuffed bhindi and mix it well. Stir it occasionally and keep the flame low.

  8. Cover it with a lid. Let it cook for 10 minutes. Stir it. Cover it again. Let it cook for some time. After 5 minutes check if it is cooked or not.

Important points to be noted in Stuffed Bhindi Recipe

  1.  Make sure that the Bhindi does not get break into two while stuffing Bhindi.
  2. Don’t keep the flame high otherwise masala will get burnt and will not taste good.
